Gibbs was signed by the New York Yankees in 1961 and made his major league debut in September of the same year. He quickly became a reliable catcher, known for his excellent defensive skills and his ability to call a game. Gibbs spent his entire ten-year career with the Yankees and was a member of three World Series championship teams in 1961, 1962, and 1978. He retired after the 1971 season with a .233 batting average, 661 hits, 27 home runs, and 224 RBIs in 1,288 games.

After retiring from professional baseball, Gibbs returned to the University of Mississippi as a coach, serving as the head coach of the baseball team from 1972 to 1990. In his tenure, he led the Ole Miss baseball team to 7 NCAA tournament appearances and won four SEC championships. Gibbs was inducted into the Mississippi Sports Hall of Fame in 1984 and inducted into the Ole Miss Athletics Hall of Fame in 1995.
