Giese was selected in the 34th round of the 1999 MLB Draft by the Boston Red Sox, but he did not sign with the team. Instead, he began his professional career in the independent leagues, playing for the Chico Heat and the Sonoma County Crushers. He signed with the San Francisco Giants in 2002, and after a few years in the minor leagues, he made his MLB debut in 2007. Giese also played for the Oakland Athletics and the New York Yankees during his career. His most significant achievement was winning the World Series with the Yankees in 2009.

Giese retired from baseball in 2011 and has since worked as a scout for the Los Angeles Dodgers. He has also been involved with coaching youth baseball and running a baseball academy in Northern California.
