Pappas made his Major League Baseball debut on August 5, 1993, with the Baltimore Orioles. He played for four seasons with the Orioles, playing a key role in the team's success in the 1996 season. In 1997, he signed with the St. Louis Cardinals as a free agent, where he played for three seasons.

Throughout his baseball career, Pappas constantly demonstrated his exceptional skills as a catcher. He was credited for his ability to receive pitches, handle the pitching staff, and call the right pitch based on the game situation.
