After high school, Poole attended Georgia Southern University, where he continued to hone his pitching skills. He was drafted by the Baltimore Orioles in the 14th round of the 1988 MLB draft and began his professional career in the minor leagues. In 1989, he made his MLB debut with the Orioles and went on to play for six different teams during his ten-year career. Poole's best season came in 1994, when he recorded a 1.60 ERA as a relief pitcher for the San Francisco Giants.

Throughout his career, Poole was known for his sharp sinkerball, which eluded many hitters. He retired in 1999 with a career record of 22-21 and a 4.31 ERA. After his baseball career, Poole returned to Georgia Southern University as a pitching coach, where he helped the team win its first-ever conference championship. Poole's dedication to baseball and his coaching expertise have left an indelible mark on the sport he loves.
