Griffin made his MLB debut on September 7, 1983, with the San Francisco Giants. He played with the team until 1985 before being traded to the San Diego Padres in the middle of the season. He played for the Padres until 1987, and then was traded to the Cincinnati Reds in 1988, where he played his final season. Throughout his career, Griffin primarily played as a center fielder and left fielder.

In his four seasons in the MLB, Griffin had a batting average of .247 with 19 home runs and 75 runs batted in. While he was not a star player, he was known for his speed and agility on the field. Griffin continued to play baseball in the minor leagues for several years before retiring from the sport. After his baseball career, Griffin became a baseball coach and worked with several teams, including the University of Oregon and the Los Angeles Dodgers.
