He was raised in South Jordan, Utah and studied at Bingham High School where he was a top tight end prospect in the 2015 recruiting class. He was ranked as the No. 2 tight end prospect in Utah and the No. 31 prospect in the country by Scout, while Rivals listed him as the No. 4 tight end prospect in Utah and the No. 205 prospect in the country. Schultz was known for his exceptional size, strength, and athleticism, which made him an asset for his high school football team. After finishing his college career in 2017, Schultz was selected by the Dallas Cowboys in the fourth round of the 2018 NFL Draft. He joined the team as a backup tight end and played in all 16 games, recording 12 receptions for 116 yards with a touchdown. Despite limited playing time, Schultz's potential was evident to Cowboys' coaches, and he was named the starting tight end for the 2020 season after the team's star player was hit by an injury.
