Mitchell was drafted by the Miami Dolphins in the fourth round of the 1990 NFL Draft. He spent four seasons with the Dolphins, starting 32 games and leading them to the playoffs in 1992 and 1994. In 1993, he threw for 3,208 yards and 17 touchdowns, earning him a Pro Bowl selection.

Mitchell also played for the Detroit Lions, Baltimore Ravens, and Cincinnati Bengals during his 12-year NFL career. He retired in 2001 with 20,311 passing yards and 123 touchdowns. After his playing days were over, Mitchell became a contestant on the reality show, "The Biggest Loser," where he lost over 100 pounds. He has since become an advocate for health and wellness, speaking on the benefits of a healthy lifestyle.
