Garrison's professional career began after he was selected by Dallas Cowboys in the fifth round of the 1966 NFL Draft. He played for the team for ten seasons, during which he became a three-time Pro Bowler and achieved legendary status among the Cowboys' faithful. Garrison was an instrumental player for the Cowboys, cementing his place as a powerful and versatile fullback. He played in two Super Bowls (V and VI) with the team, winning Super Bowl VI in 1972. Garrison was also a member of the Cowboys team that won the National Football Conference (NFC) title an impressive five times between 1970 and 1978.

Throughout his career, Garrison earned a reputation for his fearless approach both on and off the field. He was widely known for his toughness and tenacity as a player, which saw him play with various injuries during his career. Off the field, Garrison also had a passion for ranching, which he pursued further after his retirement from football. He established a successful cattle business and became a much-loved figure in the world of farming and ranching.
