Despite being born abroad, Adams was raised in Calgary, Alberta, Canada, where he began playing organized hockey at a young age. Adams was drafted by the Hartford Whalers in the ninth round of the 1996 NHL Entry Draft but did not make his NHL debut until the 2000-2001 season when he played with the Carolina Hurricanes. He played with the Hurricanes for three seasons before being traded to the Chicago Blackhawks in June 2004. Adams played two seasons with the Blackhawks before being traded to the Pittsburgh Penguins in February 2009. It was in Pittsburgh where Adams would find the most success of his career, helping the Penguins win the Stanley Cup in both 2009 and 2016. In 968 NHL games played, Adams tallied 168 points and was known for his strong defensive play and leadership abilities.

After retiring from professional hockey in 2015, Adams remained involved with the sport by working as a consultant for the Penguins and as an analyst for NBC Sports. In addition to his on-ice accomplishments, Adams is also known for his charitable work. He was a finalist for the NHL's King Clancy Memorial Trophy in 2012, an award given to the player who best exemplifies leadership qualities both on and off the ice, and he founded the Craig Adams Foundation, which provides support to charities in Pittsburgh and his hometown of Calgary.
